<span style="font-family: Verdana, sans-serif;">These are Food For Life wraps made with brown rice flour instead of wheat flour. The best way to use these are heated in a pan or the oven because they don't do well directly out of the package.</span><br />

<span style="font-family: Verdana, sans-serif;">Heat a cast iron pan until hot. Place the rice wrap in the pan and cook until both sides are starting to brown (do not use spray or oil). The browner, the crispier! </span><br />

I am definitely at a stage in my life where this has become one of my favorite books. I put this on my Amazon account in the save for later section last year and I finally moved it to my buy section when I needed enough to make $25 for my free shipping.<br />
I'm glad I did. It's a page turner for sure! The author Christopher McDougall tells the story of the running people in the Copper Canyons in Mexico as a result of his writing career and seeking out some answers to why runners are always injured (it's the shoes!)<br />
It's highly motivational, educational and if you are a runner or even a walker, after reading this book you will through out your running shoes and buy some new barefoot (minimalist) sneakers. This book was given to me by a client who's wife was recently diagnosed with cancer. My client's family decided to go 100% percent plant based and low fat to fight this disease and this is a book that he came across listening to an NPR broadcast.<br />
<br />
One point of the book is that our issues with obesity is a result of our environment. I agree with the author after reading this book. He also clearly explains the medical professionals, the medias and the governments involvement in our current health care and growing obesity and metabolic issues.<br />

<span style="font-family: Verdana, sans-serif;">But why is it that we can just cut back on calories and move more? It's calories in/calories out right?</span><br />

<span style="font-family: Verdana, sans-serif;">Here is a way to look at why it's so hard to loose weight in todays culture:</span><br />
<span style="font-family: Verdana, sans-serif;">environmental - biochemistry - behavior.</span><br />
<span style="font-family: Verdana, sans-serif;"><br /></span>
<span style="font-family: Verdana, sans-serif;">Environmental</span><br />
<span style="font-family: Verdana, sans-serif;">We live in a mass media culture where the food industries are ruling. We are constantly bombarded with false information on what is considered healthy. As a result we are misinformed about our healthy food choices.</span><br />
<span style="font-family: Verdana, sans-serif;">Most of our so called "healthy" foods are genetically modified (not in the chemical form that nature intended) and grown in chemically infused soils and finished off with a coat of pesticides. This creates illnesses, food resistances and allergies that are new and more popular every year.</span><br />
<span style="font-family: Verdana, sans-serif;">Our restaurants are profiting on high fat, sodium and sugar which enhances flavor and keeps you wanting and eating more. </span><br />
<span style="font-family: Verdana, sans-serif;">Our grocery stores are filled with chemically produced food like substances that our bodies cannot possibly process on a daily basis and they eventual result is metabolic syndrome including cancers, diabetes, heart disease, behavioral disorders, skin problems and Alzheimer's (to name a few). Most food retailers don't stock healthy alternatives especially in the inner cities and rural areas. And the are few and far between any restaurants that aren't loading everything even there vegetarian choices with fat.</span><br />
<span style="font-family: Verdana, sans-serif;">Families that eat unhealthy teach their kids to eat unhealthy so our kids are now suffering from adult age onset nutritional diseases.</span><br />
<span style="font-family: Verdana, sans-serif;"><br /></span>
<span style="font-family: Verdana, sans-serif;">Biochemistry</span><br />
<span style="font-family: Verdana, sans-serif;">As a result of our environmentally limiting food choices. Our biochemistry changes which can alter our eating behaviors.</span><br />
<span style="font-family: Verdana, sans-serif;">This is the insulin - leptin - dopamine effect.</span><br />
<span style="font-family: Verdana, sans-serif;">Insulin is a peptide hormone that increases when you blood sugar rises. </span><br />
<span style="font-family: Verdana, sans-serif;">Leptin is a protein hormone that signals the body that it is satiated and it's time to stop eating and move.</span><br />
<span style="font-family: Verdana, sans-serif;">Dopamine functions as a neurotransmitter that is responsible for reward-driven learning. It is the good feeling sensations we get from eating yummy unhealthy foods.</span><br />
<span style="font-family: Verdana, sans-serif;">When your insulin increases, it shuts off the leptin's ability to say "I'm full, stop eating" and as a result your body thinks that it is starving even after consuming a significant amount of calories. Dopamine also makes you eat more because it gives you that satisfying reward that we seek. Unfortunately, dopamine is what drives addiction because each time we eat (or take drugs) we continually need more to reach the same reward.</span><br />
<span style="font-family: Verdana, sans-serif;"><br /></span>
<span style="font-family: Verdana, sans-serif;">Behavior</span><br />
<span style="font-family: Verdana, sans-serif;">Because of our unhealthy food choices, it changes our biochemistry which modifies our behavior. The more we eat unhealthy food the more we eat unhealthy food. When we restrict </span><span style="font-family: Verdana, sans-serif;">calories</span><span style="font-family: Verdana, sans-serif;"> </span><span style="font-family: Verdana, sans-serif;">(Weight Watchers)</span><span style="font-family: Verdana, sans-serif;"> </span><span style="font-family: Verdana, sans-serif;">but are still eating unhealthy foods it can't last (or make us healthy) because our biochemical reactions kick in and tells us that we are starving so we eventually lose the weight loss battle. </span><br />
<span style="font-family: Verdana, sans-serif;">Addiction to sugar and unhealthy foods can be overcome understanding the consequences are so extreme (obesity pandemic) and expensive (high cost of health care), but not everyone is able to kick the bad eating habit no matter what the </span><span style="font-family: Verdana, sans-serif;">consequences are just like not all drug addicts and alcoholics will kick their habits even with help.</span><br />
<span style="font-family: Verdana, sans-serif;"><br /></span>
<span style="font-family: Verdana, sans-serif;">This is the cycle that we are getting trapped in and why our waist lines and health issues are growing at an alarming rate.</span><br />

<span style="font-family: Verdana, sans-serif;">Understanding how to get off the high fat and sugar and increasing real fiber (not the crap in your processed GMO breakfast cereal) is the place to start to get your health and weight and where it should be. </span><br />

Eating Right Gives the Most Protection During This Flu Season</h3>

We are having lots of <a href="http://www.drfuhrman.com/shop/super_immunity_book.aspx">viral illness</a> going around, and I was asked to comment on the flu vaccine again. Certainly, with the <a href="http://www.diseaseproof.com/archives/cold-flu-six-steps-to-protect-your-family-from-avian-flu.html">flu</a> virus circulating this season, flu-phobia is everywhere. Plus, there is a shortage of flu vaccines, so what are we to do? <b>The answer is eat right, get enough sleep, and keep your hands away from your face (until right after you wash them).</b> It is very difficult to get a significant viral inoculum if you do not put your hands near your mouth and nose. Remember, when you are in public, such as at work or school resist the temptation to touch your face or put your hands near your nose or mouth. That works, because you can’t get enough virus in the orifices of your body just by breathing the air, unless someone coughs right on you. <br />
<b><img align="right" alt="Flu shot sign. Flickr: paulswansen" height="350" hspace="10" src="http://www.diseaseproof.com/uploads/image/flu%20shot%20sign%20paulswansen.jpg" vspace="10" width="300" />Plus, the flu shot is not very effective anyway.</b> Please consider that over 200 viruses cause influenza and influenza-like illness; both produce the same symptoms, such as fever, headache, aches and pains, cough, and runny nose. Laboratory tests are required for doctors to tell the two illnesses apart. Both illnesses last for days and both rarely lead to death or serious illness. Even in the best-case scenario, vaccines might be effective against only some influenza A and B, but those represent less than 10% of all circulating viruses.<br />
Each year, the World Health Organization makes recommendations for which viral strains should be included in the upcoming year’s flu vaccinations. So the vaccines may have some effectiveness against specific viral strains, but the degree to which the vaccine-included strains match the virus actually in circulation varies from year to year.<br />
So that means that even if you are in that 10 percent of sick people with flu-like symptoms who really have influenza A or B, only about half of those vaccinated will be helped by the vaccine because the other half will have strains that were not included in the vaccine.<sup>1</sup> And even with the best matching conditions the vaccine may diminish your symptoms somewhat, but not necessarily preclude you from catching the flu. The internationally renowned Cochrane Collaboration investigated this issue directly by reviewing all the relevant studies, involving over 70,000 participants. The most impressive thing about this meta-analysis was that the authors were completely independent from the U.S. vaccine manufacturers and the powerful pharmaceutical and vaccine lobby, so the reported results were unbiased.<br />
They assessed all trials that compared vaccinated people with unvaccinated people. The combined results of these trials showed that even under ideal conditions (vaccine completely matching circulating viral configuration), 4% of unvaccinated people and 1% of vaccinated people became infected – the vaccine had only a minor benefit. They authors estimated that under average conditions, 100 people need to be vaccinated to avoid one set of influenza symptoms or you would have to be vaccinated every year for 100 years, to save yourself one flu episode. Interestingly, the study showed that flu vaccine did NOT significantly affect the number of people hospitalized or working days lost, and did not prevent flu-associated complications or those rare flu-associated deaths.<span style="font-size: xx-small;"><sup>1, 2</sup></span> So even though the vaccine had some very slight effects, the benefits were very small. In fact, in children two years and younger they found the effectiveness of the vaccine was no better than a placebo.<span style="font-size: xx-small;"><sup>3</sup></span><br />
The Cochrane review’s authors were highly critical of the U.S. Centers for Disease Control, with its members having financial ties to the pharmaceutical companies. They noted that industry-funded studies were more likely to report findings favorable to the vaccines, that there was evidence of “widespread manipulation of conclusions” in those studies. The authors disagreed with the CDC’s recommendation for universal vaccination at all ages without clear evidence of significant effectiveness and safety. Certainly the elderly, the group most vulnerable to non-pandemic flu, should benefit the most, but this also is not observed as the vaccine does not work well in the elderly because of their decline in immune function.<span style="font-size: xx-small;"><sup>3, 4</sup></span><br />

To summarize, the vaccine does have some slight effects in reducing flu incidence and severity, but in those at most at risk, the very young and the very old, it is not yet clear whether the vaccine has any protective effect at all.</blockquote>
Those of us that are healthy need not worry about the dangers of the flu anyway. No treatment, drug or vaccine is without risk, and you only have to read the circular with the vaccine to be informed of those clear risks. Also, if you do get a flu shot, never get a shot from a multi-use vial, which contains more mercury and preservatives than the single dose vials.<br />

<span style="letter-spacing: 0.0px;">Q: I know that it is best to order (or make) steamed vegetables. If I were to order (or make) vegetables with a 'little" olive oil, how much olive oil do you think is usually used in proportion to the vegetables and how bad would that be? </span></div>

<span style="letter-spacing: 0.0px;">A: No one knows for sure. And little amounts can have a big impact since oil is the most calorie dense food there is. And, while vegetables are the lowest in calorie density, the impact of even small amounts of oil on the vegetables can be huge.</span></div>

<span style="letter-spacing: 0.0px;">In addition, in spite of all the health claims, olive oil is a very rich source of calories and, in addition, 14% of the calories in olive oil come from saturated fat. The current recommendation from the American Heart Association is to limit our intake of saturated fat to no more than 7% of calories. Personally, I think less than 5% is better.</span></div>

<span style="letter-spacing: 0.0px;">Now, this is a great question because everyone always wants to know, "how bad is a little of this" or "a little of that." Your question, will give us an opportunity to look at this issue in detail. </span></div>

<span style="letter-spacing: 0.0px;">So, let’s see how this works (and bear with me and all the math as I think this is very important)…</span></div>
<div style="font-family: Arial;">

<span style="letter-spacing: 0.0px;">Let’s say you ordered a plain side of steamed vegetables. For every 1/2 cup serving of steamed vegetables, that would be about 25 calories. So, even a larger 1 cup serving would be only 50 calories.</span></div>
<div style="font-family: Arial;">

<div style="font-family: Arial;">
<span style="letter-spacing: 0.0px;">Olive Oil, like all oils, is 40 calories per tsp.</span></div>
<div style="font-family: Arial;">
<br /></div>
<div style="font-family: Arial;">
<span style="letter-spacing: 0.0px;">So let’s see the impact.</span></div>
<div style="font-family: Arial;">

<div style="font-family: Arial;">
<span style="letter-spacing: 0.0px;">If the serving of veggies is 25 calories (1/2 cup), adding even just 1 tsp. of oil would raise the total calories from 25 to 65 and the majority of the calories (62%) would now be coming from oil. Since most of the calories are no longer coming from the vegetables, this technically is no longer a side of veggies but a side of oil, with some veggies added. :)</span></div>

<span style="letter-spacing: 0.0px;">In addition, in regard to saturated fat, the vegetables would have virtually none. But by adding in the olive oil, the side dish is now about 10% saturated fat.</span></div>

<span style="letter-spacing: 0.0px;">As we can see, the impact of the oil on the vegetables, at this level, is dramatic and that is just for a tsp. of oil.</span></div>

<span style="letter-spacing: 0.0px;">If we add 2 tsp. of oil to a 1/2 cup serving of steamed vegetables, we would raise the total calories from 25 to 105, and the majority of the calories (76%) would now be coming from oil. This side dish is also now 11% saturated fat.</span></div>

<span style="letter-spacing: 0.0px;">If we add 3 tsp. of oil (which is the same as one tablespoon) to a 1/2 cup serving of steamed vegetables, we would raise the total calories from 25 to 145 and the majority of the calories (83%) would now be coming from oil. The side dish is now also 12% saturated fat.</span></div>

<span style="letter-spacing: 0.0px;">For those of you who eat more than a serving of vegetables at a time, let’s see the impact of the oil on the vegetables if we double the side dish of vegetables to 1 cup, which, according to traditional serving sizes, is 2 servings of vegetables. </span></div>

<span style="letter-spacing: 0.0px;">If the serving of veggies is 50 calories (1 cup), even just 1 tsp. of oil would raise the total calories from 50 to 90 and almost half of the calories (45%) would now be coming from oil. In addition, in regard to saturated fat, the vegetables would have virtually none, but by adding in the olive oil, the side dish is now 7% saturated fat.</span></div>

<span style="letter-spacing: 0.0px;">If we add 2 tsp. of oil to the 1 cup serving of vegetables, we would raise the total calories from 50 to 130 and the majority of the calories (62%) would now be coming from oil. The dish is also now 9% saturated fat.</span></div>

<span style="letter-spacing: 0.0px;">If we add 3 tsp. of oil (which is the same as one tablespoon) to one serving of vegetables, we would raise the total calories from 50 to 170, and the majority of the calories (70%) would now be coming from oil. The side dish is also now 11% saturated fat.</span></div>

<span style="letter-spacing: 0.0px;">As we can see, the impact of even a little oil on typical serving sizes of vegetables is dramatic. </span></div>

<span style="letter-spacing: 0.0px;">Now, remember, this analogy is with olive oil, which is supposed to be one of the healthier oils. Imagine the negative impact a little coconut oil, which is over 90% saturated fat (with about 30% of the calories being the worst saturated fats), would have in the same scenario. </span></div>

<span style="letter-spacing: 0.0px;">But, I know, some of you say you REALLY eat lots of vegetables. :)</span></div>

<span style="letter-spacing: 0.0px;">So, let's look at the impact of even a little oil on a large amount of salad and/or vegetables. Let's use a pound of steamed greens, which, for the record, would be about 3.5 cups of steamed kale.</span></div>

<span style="letter-spacing: 0.0px;">A pound of steamed kale is 125 calories and is 1.4% saturated fat.</span></div>

<span style="letter-spacing: 0.0px;">Adding 1 tsp. of oil would raise the total calories from 125 to 165 and 25% of the calories would now be coming from the oil. In addition, in regard to saturated fat, by adding in the olive oil, the side dish is now 5% saturated fat.</span></div>

<span style="letter-spacing: 0.0px;">Adding 2 tsp. of oil would raise the total calories from 125 to 205 and 40% of the calories would now be coming from the oil. In addition, by adding in the olive oil, the side dish is now almost 7% saturated fat.</span></div>

<span style="letter-spacing: 0.0px;">Adding 3 tsp. (1 TB) of oil would raise the total calories from 125 to 245 and almost 50% of the calories would now be coming from oil. By just adding 3 tsp. of oil to a pound of veggies, almost half the calories now come from the oil. In addition, by adding in the olive oil, the side dish is now almost 8% saturated fat.</span></div>

<span style="letter-spacing: 0.0px;">In my personal and professional opinion as both a RD, a former chef and a frequent visitor of restaurants, a TB of oil, if not more, is what many people are using (or getting) per typical serving of food/vegetables, which as we can see, can have a huge impact. But, you actually may be getting much more. So, let’s do one more example with 2 TB of oil. </span></div>

<span style="letter-spacing: 0.0px;">Adding 6 tsp. (or 2 TB) of oil would raise the total calories from 125 to 365 and 65% of the calories would now be coming from oil. In addition, by adding in the olive oil, the side dish is now 10% saturated fat.</span></div>

<span style="letter-spacing: 0.0px;">And this is playing out in homes and restaurants every day under the mistaken guise that oils, like olive oil are healthy for you.</span></div>

<span style="letter-spacing: 0.0px;">For example, I was in an Italian restaurant a few weeks ago that is supposed to be known for its "healthy" food. One of the members of the party I was with was trying to order a "heart healthy" meal. She ordered pasta primavera with a plain tomato sauce and specifically requested it be cooked with "as little oil as possible." When the dish came out, there was so much oil in the plate, she asked for a second plate so she could lift out the pasta and veggies from all the oil and put them in a new bowl. After she did this, we looked at the remaining oil in the original plate and there had to be over 1/2 cup if not more, of oil left in the original bowl. A 1/2 cup of oil is the equivalent of 8 tbsp. Imagine the impact this would have had on someone trying to eat "Heart Healthy." Even though she removed the pasta she was going to eat from all this oil, we still have no idea how much oil was still left in the pasta, veggies and sauce. </span></div>

<span style="letter-spacing: 0.0px;">Instead of using oil, try sprinkling some balsamic vinegar and/or some lemon juice on your veggies along with some fresh herbs/seasonings. Balsamic vinegar has only about 5 calories per tbsp. and has no saturated fat. It will also add lots of flavor without adding any of the extra calories, fat and saturated fat that is in olive oil.</span></div>

<span style="color: cyan;">Here at the beginning of the Holiday Challenge is a great time to expose the lies that you’ll most likely be hearing from friends, family, and co-workers over the next few weeks.</span><br />
<span style="color: cyan;">They’ll be saying stuff like: “Oh come on, just one bite won’t hurt; or it’s the holidays, it’s time to indulge ~ <i>everyone’s </i>doing it! You can start over in January.”</span><br />
<span style="color: cyan;">Or worse yet, “I made your favorite cheese ball, <i>just for you</i>.” </span><br />
<span style="color: cyan;">The truth is, processed fake food <i>will</i> hurt you; and hurt you in a big way! Fat, sugar, flour, greasy meats and cheeses, processed foods, salt, etc., are addictive <i>and </i>deadly.</span><br />
<span style="color: cyan;"><strong>ADDICTIVE.</strong> Even with the best intentions, one bite always turns into two, three, four . . . .the whole pan. </span><br />
<span style="color: cyan;"><strong>DEADLY. </strong> More heart attacks occur after the holidays than any other time of the year; not to mention the prolific fueling of cancer cell growth, diabetes, autoimmune diseases, etc. </span><br />

<li><span style="color: cyan;">The truth is food addiction is worse than any drug addiction because it is socially acceptable, and the foods are so easily available; plus, their consumption is promoted by dear Grandma, sweet Aunt Betty, <i>and </i>even clergy, teachers, and medical professionals (gasp!) In fact, not only are addictive foods served at most all holiday events and gatherings, one can be ridiculed, or made to feel guilty if he/she doesn’t participate in the addiction.</span></li>
</ul>

<li><span style="color: cyan;">Time to burst the bubble: your loved one, co-worker, or friend didn’t make that favorite cheese ball <i>just for you</i>. For whatever reason, that person has a dysfunctional desire to sabotage your goal to be healthy. If they really cared about you, and they really had goodwill towards you, they would support your wishes. If you let them know your food needs beforehand, but they disregard your preferences anyway; forcing you to decline their unhealthy offers, that is their problem, not yours. False guilt proves to be a snare each time. Don’t get caught in the deadly trap. </span></li>

<li><span style="color: cyan;">Starting over on January 1<sup>st</sup> is a big, fat lie. </span></li>

Because then you’ll have the Super Bowl party to contend with, then Valentine chocolates, followed by birthday parties, Easter candies, Mother’s Day, Father’s Day, graduation open houses, wedding receptions, more birthday parties, summer picnics & cookouts, fall festivals, Halloween, and then back to the holidays all over again.</span></li>

<li><span style="color: cyan; text-align: left;">Keep in mind the average American will consume the equivalent of over 50 cups of sugar and 42 sticks of butter during the six week period of time between Thanksgiving and New Years. Yikes! That's a lot of disease promoting stuff! [</span><a href="http://www.diseaseproof.com/archives/holiday-challenge-the-holidays.html" style="text-align: left;">click here</a><u style="color: cyan; text-align: left;">]<strong> </strong></u><strong style="color: cyan; text-align: left;"> </strong><span style="color: cyan; text-align: left;">If one doesn’t draw the line, and declare a solid commitment to abstinence, food addiction and the resulting “blahhhs” will take over holiday fun and festivities. One will become a captive to weight gain, tight fitting clothes, puffiness & bloating, fatigue, stomach aches, headaches, and a general malaise feeling all over the body. </span><a href="http://www.diseaseproof.com/archives/holiday-challenge-today-is-the-kickoff.html" style="text-align: left;">And as Dr. Benson wrote in his kick-off post </a><i style="color: cyan; text-align: left;">“There are medical studies that document the fact that every year there is a surge in the number of heart attack deaths that occur in the winter after the holidays when people eat poorly and stop exercising.”</i></li>

<li><span style="color: cyan;">Last but not least, as happy and festive as the holidays can be, many may be experiencing deep sadness this time of year. Perhaps you are facing a first Christmas or Hanukah without a precious family member, or are in the midst of a bitter divorce and child custody battle, or lost a job, or lost a home and belongings in the wake of hurricane Sandy. The holidays can magnify the grief and sadness. It will be especially important to pamper yourself with the best health that’s possible. Even though it may take all you have to muster up the strength to shop for, and make nutritious food, it has to take precedence over all activities this holiday season. Don’t allow </span><i style="color: cyan;">anything, </i><span style="color: cyan;">even the anguish of profound grief, get in the way of eating for health and self-care. </span>
