Cucumber Bread No-Oil


Preheat the oven to 375

In a food processor add:
1 large peeled and sliced cucumber
1/2 c maple syrup
1 1/2 c whole wheat pastry flour
1 tsp baking soda
1 tsp baking powder (aluminum free)
1/2 tsp kosher salt
1/2 tsp cinnamon

Process until blended. Stir in:

3/4 c blueberries
1/2 cup chopped
walnuts

Poor into a bread pan and bake for 40-45 minutes.
