Pan Cake
Pre-heat the oven 425
Pre-heat on the stove top a 9 or 10 inch well season cast iron pan.
Mix together in a bowl:
1 c whole wheat pastry flour
1 teaspoon aluminum free baking powder
1/2 teaspoon baking soda
pinch of salt
2 tablespoons ground flax seed (optional)
1 teaspoon cinnamon (optional)
1/4 c real maple syrup.
Stir in enough non-dairy milk to make a thin pancake batter.
Pour in pre-heated pan (spray with cooking spray if you have to).
Generously top with your favorite seasonal fresh fruit and chopped unsalted nuts.
Bake for 15-20 minutes.
Cut into wedges.
Serve with real maple syrup.
My boy friend like serving it with melted peanut butter (all natural from Once Again Nut Cutter in Nunda NY)
