Smashed potatoes with lemon pepper, pepper sauce and spinach |
Steam until tender (or roast, never boil or you lose the nutrients to the water).
In a food processor add:
2 cans chick peas with the liquid
zest of 1 lemon
juice of 1 lemon
1 seeded and chopped yellow, orange or red pepper
cayenne pepper
Blend until somewhat smooth. Add a touch of tamari (optional).
Put some frozen spinach in a large microwave safe bowl and heat until thawed and warmed (you can use and veggie you want).
When the potatoes are done mash with the chick pea sauce and serve with the spinach.
Make what ever amount you need. The lemon sauce is good for 5-6 med-large potatoes.
