Summer Garden In A Skillet


Is your garden over flowing or you just can pass by the farmers stand?
This recipe is quick and easy using your favorites!

Saute veggies in water until tender: I used onions, garlic, sweet pepper, jalapeno and eggplant.

Add chopped tomatoes and seasoning: I used fresh basil, oregano.
And I added some chopped extra firm tofu (optional).
Now that was easy!
