Plant-Based Gravy (gluten-free)

This is a quick recipe that adds some flavor to veggies, rice or potatoes

In a food processor chop 1/3 c of cashews (you can use 1/4 c cashew butter)
Coarsely chop 1 organic carrot. Microwave for 2-3 minutes or until just softened.
Add carrot to cashews and chop for a minute.
Add 2 cans of pinto beans (with liquid). Blend, it won't be completely smooth.
Optional: add 1-2 teaspoons of tamari and 1 chopped hot pepper.

This is the basic sauce, you can experiment with different kinds of beans (like chickpeas)
and adding cooked onions, roasted garlic and sweet peppers. Be creative!
