Peanut Butter Pasta

Cook 1 box (1 lb) of your favorite whole grain or GF pasta.

In a large pan saute 1 chopped onion in water
1 can of organic chopped tomatoes
1/4 cup real, all natural peanut butter
1-2 tablespoons maple syrup
1-2 tablespoons tamari sauce (or soy sauce)
1/2 cup water
1/2-1 teaspoon cayenne pepper
Simmer for a few minutes until it starts to thicken. Add more water if necessary.
Turn off the heat and add 1-2 cups frozen mixed veggies.
Add cooked drained pasta.
