Nachos!



Great for company, supply a lot of napkins!















In order from bottom to top layer:
lettuce (fresh from my garden)
tortilla chips (I used Plocky's louisiana hot red bean and rice, low in fat and no GMO's)
no-fat refried beans
hummus
salsa
pepper rings.

Microwave for 3 minutes or until hot.

  2. Wow, thank you so much for posting this! We love our chips, but great to see this inventive way of using them. Sounds super yummy! (Now I'm wondering how it would taste to substitute some of our hummus chips in the recipe as well, to make this a gluten-free recipe...)

    1. You're right! That's why I used Plocky's because it's the lowest in fat per serving and it's non-GMO.
