Rice and Veggies

Cook some rice, brown or basmati
I usually make 2 cups of rice to 4 cups+ water in my rice cooker. That gives me plenty of leftovers for meals for a couple of days.

Microwave 1-2 cups of your favorite frozen (organic) mixed veggies until thawed.
I used spinach and mixed veggies

Put cooked rice on your plate, top with mixed veggies, salsa and hummus.
I used roasted red pepper hummus

Microwave for a few minutes until the toppings are heated.

Wasn't that easy?
