Not-Deep Fried Tofu (GF)

I'm not really a big fan of tofu, probably because I haven't learn how to use it with out adding fat so it has no flavor to me. This recipe is so good that I eat them off the pan when they come out of the oven. They make really good salad croutons too!

Preheat oven 450°
Freeze a brick of extra firm or firm tofu.
Thaw it out and squeeze as much water out of it as you can.
Slice it in 1" x 2" very thin pieces.
Toss tofu in Chick pea flour season with cayenne pepper and a touch of season salt.
Spread in a single layer on a baking sheet (spay lightly with cooking spay if needed).
Bake for 15 minutes
Flip, bake for 10 - 15 more minutes or until very crispy.
