Carrot Burgers


In a Food processor add:
5 chopped carrots
1 small chopped onion
1 large garlic clove (put it in the microwave for 10 seconds and the skin comes right off)
1 chopped celery stalk
1 small handful of cashews (optional)

Process until it is in very small pieces about 30 seconds.
Transfer to a microwave safe bowl and microwave for 4 minutes.
Stir then microwave for 4 more minutes.

While the carrots are cooking:
drain and pat dry with a paper towel 1 can of pinto beans
Put them in the food processor
Add to the beans:
1/4 c ground flax seed (this binds it together)
and your favorite seasonings.
I used:
1/2 tablespoon of maple syrup
pinch of salt
1/2 teaspoon cayenne pepper
Whats nice about making veggie burgers is that you can taste them before you cook the to see if you have the seasonings right.

Stir the bean mixture into the cooked carrot mixture (it should be fairly dry).
Fry until brown, about a 1-2 minutes on each side. (use a touch of cooking spray if you have to).

Serve with organic ketchup and/or hummus.
