Apple Walnut Zucchini Bread

There is no oil or eggs in this recipe!
So good and moist!

Preheat oven 375°
1 1/2 cups shredded zucchini
1 20 oz can crushed pineapple (drained)
1/3 cup maple syrup
1 1/2 teaspoons baking soda
1 teaspoon salt
1 teaspoon cinnamon
pinch of nutmeg
2 tablespoons ground flax
2 cups whole wheat pastry flour

Mix all the ingredients in a bowl.
Add 1 cored finely chopped large apple and 3/4 cup walnuts

Pour into a large bread pan lined with parchment paper.
Bake for 50-55 minutes
