Garden Spaghetti Sauce

I could have eaten the whole pot!

In a crock pot turned on high:
1 chopped small red onion
2-3 chopped carrots
2 hot red peppers
Add a little bit of water to keep the onions and peppers from sticking
Put the cover and let cook for 1 hour

Add:
2 cans chickpeas with liquid
2 cans organic chopped tomatoes
1 small can of tomato paste (organic if you can find it)
1 tablespoon +/- Tamari (optional)
Season with oregano and basil

Add a little water if you think it is to thick.

Cook for a couple of hours on high or put on low if you are gone all day.

Just before serving add your favorite frozen veggies. I used mixed veggies and peas.
Serve over your favorite whole grain or gluten free pasta.
