Tortilla Wraps, Gluten Free

If you are looking for a gluten free tortilla wrap these are pretty good!

I found these in the freezer section of the natural food section in my local Wegmans store.

These are Food For Life wraps made with brown rice flour instead of wheat flour. The best way to use these are heated in a pan or the oven because they don't do well directly out of the package.

Method 1:
Heat a cast iron pan until hot. Place the rice wrap in the pan and cook until both sides are starting to brown (do not use spray or oil). The browner, the crispier! 
Remove from the pan and add your favorite ingredients, roll up and eat.

Ingredients I use are:
Hummus
Salsa
Avocado
Veggies, such as sweet peppers

Method 2 (to make several at a time):
Preheat your oven to 400°
Place your favorite ingredients on half of the wrap.
Fold in half and press edges together
Place on a baking sheet
Bake for 5-10 minutes or for your desired crispiness.

Berry Cobbler, GF

This sweet treat has no added fat, no processed white sugar and is gluten free!
Ingredients: fruit, oatmeal, salt & maple syrup


Preheat your oven to 410°
In a pie plate or a square glass pan, fill it half way with your favorite berries (I have also used frozen sliced strawberries). (Add chopped walnuts on top of the fruit if desired)

In a food processer: process 2 cups of good quality old fashioned oatmeal until becomes like a course flour. 
Add a 1/4 teaspoon of salt
Add enough maple syrup to the oatmeal to make a thick batter - 1/4 to a 1/3 cup. 

Pour the oatmeal batter on top or the fruit. (Add chopped walnuts on top of the fruit if desired)

Bake for 25 minutes (time varies depending on your oven)

Strawberry Soda - Homemade!


So Good!


Drinking soda such as colas, diet or regular leads to obesity, rotten teeth and extremely bad health due to the chemical and HFCS (corn syrup sweeteners) make up of this product. Never consume it!
But if you like the bubbles, here is your treat!

In a small glass slice 4-5 medium strawberries, stems removes. Mush the strawberries with the back of a spoon until juicy and well mushed. Fill the glass with chilled seltzer water.  (Add fresh mint if you wish)
That's it!

Miso Ginger Salad Dressing (No Oil)

Tastes Like Summer!


In a jar add:
1/4 c each: rice vinegar, maple syrup and water
2 teaspoons peeled & grated fresh ginger
2 tablespoons of miso paste (can be found in the Asian section of a god grocery store)

Screw on the lid and shake well.

Rip Esselstyn's (auther of the Engine 2 Diet) new book My Beef With Meat is easy to understand and doesn't take a lot of time to read.  It is very similar to my book Sick Of Being Fat, it even has some of the exact same information, yeah! The main difference is that my book focuses on a whole lifestyle adjustment for better health and environmental awareness and Rip Esselstyn's book is a winning argument about animal products and the negative impacts raising and eating animals have on health and  the environment. 
If you are considering going Paleo, read this book first, it will change your mind!

Roasted Asparagus Sandwich

This is so good it's hard to eat only one!


Preheat oven to 450°
Place asparagus on a roasting pan or cookie sheet (do not need oil or spray!). Sprinkle with coarse salt. Roast for 20-30 minutes until asparagus starts to get crisp.

Toast your favorite organic whole grain bread (Wegmans). Spread one slice generously with your favorite hummus (Wegmans roasted red pepper). Spread the other slice generously with avocado.

Place a layer of roasted asparagus on sandwich, assemble and eat!

If you don't have fresh asparagus you can roast peppers, onions, broccoli........

Potato Salad


Bake 4-5 of your favorite potatoes. I used whatever the organic choice was at my grocery store.
Let cool. Cut in half lengthwise then slice into 1/4 inch pieces. Place in a med/lg bowl.
Finely chop or thinly slice:
1 red sweet pepper
1 carrot
1 celery
1 small cucumber
Or use what ever you have available.
Toss with potatoes.

In a small bowl mix
1/3 cup white vinegar
2 tablespoons maple syrup
Salt/pepper
Parsley
Toss with potatoes and veggies.

Try to use organic ingredients to avoid genetically modified food and pesticides.
