Tortilla Wraps, Gluten Free

If you are looking for a gluten free tortilla wrap these are pretty good!

I found these in the freezer section of the natural food section in my local Wegmans store.
Otherwise check amazon.com

These are Food For Life wraps made with brown rice flour instead of wheat flour. The best way to use these are heated in a pan or the oven because they don't do well directly out of the package.

Method 1:
Heat a cast iron pan until hot. Place the rice wrap in the pan and cook until both sides are starting to brown (do not use spray or oil). The browner, the crispier! 
Remove from the pan and add your favorite ingredients, roll up and eat.

Ingredients I use are:
Hummus
Salsa
Avocado
Veggies, such as sweet peppers

Method 2 (to make several at a time):
Preheat your oven to 400°
Place your favorite ingredients on half of the wrap.
Fold in half and press edges together
Place on a baking sheet
Bake for 5-10 minutes or for your desired crispiness.

Berry Cobbler, GF

This sweet treat has no added fat, no processed white sugar and is gluten free!
Ingredients: fruit, oatmeal, salt & maple syrup


Preheat your oven to 410°
In a pie plate or a square glass pan, fill it half way with your favorite berries (I have also used frozen sliced strawberries). (Add chopped walnuts on top of the fruit if desired)

In a food processer: process 2 cups of good quality old fashioned oatmeal until becomes like a course flour. 
Add a 1/4 teaspoon of salt
Add enough maple syrup to the oatmeal to make a thick batter - 1/4 to a 1/3 cup. 

Pour the oatmeal batter on top or the fruit. (Add chopped walnuts on top of the fruit if desired)

Bake for 25 minutes (time varies depending on your oven)

Strawberry Soda - Homemade!


So Good!


Drinking soda such as colas, diet or regular leads to obesity, rotten teeth and extremely bad health due to the chemical and HFCS (corn syrup sweeteners) make up of this product. Never consume it!
But if you like the bubbles, here is your treat!

In a small glass slice 4-5 medium strawberries, stems removes. Mush the strawberries with the back of a spoon until juicy and well mushed. Fill the glass with chilled seltzer water.  (Add fresh mint if you wish)
That's it!

1/4 c each: rice vinegar, maple syrup and water
2 teaspoons peeled & grated fresh ginger
2 tablespoons of miso paste (can be found in the Asian section of a god grocery store)

Rip Esselstyn's (auther of the Engine 2 Diet) new book My Beef With Meat is easy to understand and doesn't take a lot of time to read.  It is very similar to my book Sick Of Being Fat, it even has some of the exact same information, yeah! The main difference is that my book focuses on a whole lifestyle adjustment for better health and environmental awareness and Rip Esselstyn's book is a winning argument about animal products and the negative impacts raising and eating animals have on health and  the environment. 
If you are considering going Paleo, read this book first, it will change your mind!

Roasted Asparagus Sandwich

This is so good it's hard to eat only one!


Preheat oven to 450°
Place asparagus on a roasting pan or cookie sheet (do not need oil or spray!). Sprinkle with coarse salt. Roast for 20-30 minutes until asparagus starts to get crisp.

Toast your favorite organic whole grain bread (Wegmans). Spread one slice generously with your favorite hummus (Wegmans roasted red pepper). Spread the other slice generously with avocado.

Place a layer of roasted asparagus on sandwich, assemble and eat!

If you don't have fresh asparagus you can roast peppers, onions, broccoli........

Potato Salad


Bake 4-5 of your favorite potatoes. I used whatever the organic choice was at my grocery store.
Let cool. Cut in half lengthwise then slice into 1/4 inch pieces. Place in a med/lg bowl.
Finely chop or thinly slice:
1 red sweet pepper
1 carrot
1 celery
1 small cucumber
Or use what ever you have available.
Toss with potatoes.

In a small bowl mix
1/3 cup white vinegar
2 tablespoons maple syrup
Salt/pepper
Parsley
Toss with potatoes and veggies.

Try to use organic ingredients to avoid genetically modified food and pesticides.

Book Review: Eat & Run

Eat & Run By Scott Jurek


I read this book after I read Born to Run by Christopher McDougall who wrote about Scott Jurek, his running career and his plant-based diet. Scott Jurek's book is about his running career and how he believes that a plant-based diet (and a strong will) contributes to his success. He believes plant foods are a natural anti-inflammatory, they help you recover faster and allow you to feel better to begin with.
Scott also talks about his ability to maintain mentally for such long running distances from 50 miles up to 167 miles in 24 hours. Even if you are not a runner this book will help you understand how a great diet, exercise and determination can bring you to things that you might never think that you could accomplish.

Chopped Spinach & Carrot Salad

This is a quick and easy salad is so simple and delicious. It makes a great healthy side dish or a flavorful  sandwich spread.



Coarsely chop 3 small to medium or 2 large organic carrots.
I use organic because they are so much sweeter (& healthier).
Put chopped carrots in a food processor. 
Add a large handful of organic baby spinach leaves, 
a small handful of walnuts, 
a tiny pinch of salt
and 1-2 tablespoons of balsamic vinegar.

Process lightly to leave small chunks of carrots.

Go Juice! (Healthy Gatorade replacement)

First of all, put the gatorade down. 

Most people who drink it don't ever exercise enough to warrent the so called benefits. Gatorade is not good for you, it is junk! It has artificial colors (mood disorders),  artificial flavors (also known as natural flavors) and High Fructose Corn Syrup (addictive and Liver damage) and BVO.
Brominated Vegetable Oil (BVO) is used as a flame retardant. It's banned in Europe and Japan and has been shown to cause skin disorders, memory loss, nerve disorders, reproductive and behavioral disorders.
You don't need it even if you are an extreme endurance athlete. The only people who think that you do is the company itself (Pepsico) and they spend million of dollars in advertising to get you to believe it.

Put this in your sports bottle instead....

Istiake is a drink that the Raramuris drink for energy during endurance running. The Raramuris are a Mexican tribe isolated from the modern diet also known as the Tarahumara (the running people). They run distances of 50 miles+ in sandals in a diet mainly consisting of corn, bean and chiles and they drink Iskiate as the energy drink.

This is their recipe for Iskiate



It taste like Limeade!
Mix 1 tablespoon of organic Chia seeds in about 12 oz of water.
Add the juice and pulp of half to 1 organic lime.
Add 1-2 teaspoons of maple syrup or agave nectar.
Shake and drink!

Book Review: Born To Run


I am definitely at a stage in my life where this has become one of my favorite books. I put this on my Amazon account in the save for later section last year and I finally moved it to my buy section when I needed enough to make $25 for my free shipping.
I'm glad I did. It's a page turner for sure! The author Christopher McDougall tells the story of the running people in the Copper Canyons in Mexico as a result of his writing career and seeking out some answers to why runners are always injured (it's the shoes!)
It's highly motivational, educational and if you are a runner or even a walker, after reading this book you will through out your running shoes and buy some new barefoot (minimalist) sneakers. May be you'll become the athlete that you never thought you could!

Book Review: Fat Chance

This book was given to me by a client who's wife was recently diagnosed with cancer. My client's family decided to go 100% percent plant based and low fat to fight this disease and this is a book that he came across listening to an NPR broadcast.

One point of the book is that our issues with obesity is a result of our environment. I agree with the author after reading this book. He also clearly explains the medical professionals, the medias and the governments involvement in our current health care and growing obesity and metabolic issues.

Although I don't completely agree with his diet advice, I do recommend this book to understand why we age growing fatter and fatter at a incredible rate and nothing has been successful to change this.

Why It's So Hard To Lose Weight

As you know that waist lines are getting bigger and bigger in this country every year and now it is happening around the world making obesity a pandemic.

But why is it that we can just cut back on calories and move more? It's calories in/calories out right?

Here is a way to look at why it's so hard to loose weight in todays culture:
environmental - biochemistry - behavior.

Environmental
We live in a mass media culture where the food industries are ruling. We are constantly bombarded with false information on what is considered healthy. As a result we are misinformed about our healthy food choices.
Most of our so called "healthy" foods are genetically modified (not in the chemical form that nature intended) and grown in chemically infused soils and finished off with a coat of pesticides. This creates illnesses, food resistances and allergies that are new and more popular every year.
Our restaurants are profiting on high fat, sodium and sugar which enhances flavor and keeps you wanting and eating more. 
Our grocery stores are filled with chemically produced food like substances that our bodies cannot possibly process on a daily basis and they eventual result is metabolic syndrome including cancers, diabetes, heart disease, behavioral disorders, skin problems and Alzheimer's (to name a few). Most food retailers don't stock healthy alternatives especially in the inner cities and rural areas. And the are few and far between any restaurants that aren't loading everything even there vegetarian choices with fat.
Families that eat unhealthy teach their kids to eat unhealthy so our kids are now suffering from adult age onset nutritional diseases.

Biochemistry
As a result of our environmentally limiting food choices. Our biochemistry changes which can alter our eating behaviors.
This is the insulin - leptin - dopamine effect.
Insulin is a peptide hormone that increases when you blood sugar rises. 
Leptin is a protein hormone that signals the body that it is satiated and it's time to stop eating and move.
Dopamine functions as a neurotransmitter that is responsible for reward-driven learning. It is the good feeling sensations we get from eating yummy unhealthy foods.
When your insulin increases, it shuts off the leptin's ability to say "I'm full, stop eating" and as a result your body thinks that it is starving even after consuming a significant amount of calories. Dopamine also makes you eat more because it gives you that satisfying reward that we seek. Unfortunately, dopamine is what drives addiction because each time we eat (or take drugs) we continually need more to reach the same reward.

Behavior
Because of our unhealthy food choices, it changes our biochemistry which modifies our behavior. The more we eat unhealthy food the more we eat unhealthy food. When we restrict calories (Weight Watchers) but are still eating unhealthy foods it can't last (or make us healthy) because our biochemical reactions kick in and tells us that we are starving so we eventually lose the weight loss battle. 
Addiction to sugar and unhealthy foods can be overcome understanding the consequences are so extreme (obesity pandemic) and expensive (high cost of health care), but not everyone is able to kick the bad eating habit no matter what the consequences are just like not all drug addicts and alcoholics will kick their habits even with help.

This is the cycle that we are getting trapped in and why our waist lines and health issues are growing at an alarming rate.

Understanding how to get off the high fat and sugar and increasing real fiber (not the crap in your processed GMO breakfast cereal) is the place to start to get your health and weight and where it should be.

The Differences Between Tea

Mmmmmm......

Hot tea is so good, especially in the winter months. It's a great beverage that has no calories as long as you leave out the sugar and the milk.

We are told that herbal teas have health benefits meaning nutrients. Unfortunately not all teas are created equally. 

If you buy a brand that is not certified organic ("made with organic tea" is not 100% organic), no matter how fancy the label is or what they claim the health benefits, what you are getting are teas that are grown in chemically infused soils, sprayed with pesticides that are not legal in this country and they are genetically modified (GMO, meaning limited health benefits if any and promotes allergies).

So..... when you buy your tea make sure that the label has a "certified organic" stamp, Or.........
do what I do and make homemade tea like lemon, lime and orange tea.

Buy an organic orange, lemon or lime, cut it into 8 wedges (give or take depending on the size of the fruit. Squeeze in one wedge per cup of tea. store the rest in a zip sealed bag in the fridge. 8 cups of yummy organic healthy tea!

Does The Flu Shot Really Work?


Eating Right Gives the Most Protection During This Flu Season

 We are having lots of viral illness going around, and I was asked to comment on the flu vaccine again.  Certainly, with the flu virus circulating this season, flu-phobia is everywhere.  Plus, there is a shortage of flu vaccines, so what are we to do?   The answer is eat right, get enough sleep, and keep your hands away from your face (until right after you wash them).  It is very difficult to get a significant viral inoculum if you do not put your hands near your mouth and nose.  Remember, when you are in public, such as at work or school resist the temptation to touch your face or put your hands near your nose or mouth.  That works, because you can’t get enough virus in the orifices of your body just by breathing the air, unless someone coughs right on you.

Flickr: paulswansenPlus, the flu shot is not very effective anyway.  Please consider that over 200 viruses cause influenza and influenza-like illness; both produce the same symptoms, such as fever, headache, aches and pains, cough, and runny nose.  Laboratory tests are required for doctors to tell the two illnesses apart.  Both illnesses last for days and both rarely lead to death or serious illness. Even in the best-case scenario, vaccines might be effective against only some influenza A and B, but those represent less than 10% of all circulating viruses.
Each year, the World Health Organization makes recommendations for which viral strains should be included in the upcoming year’s flu vaccinations.  So the vaccines may have some effectiveness against specific viral strains, but the degree to which the vaccine-included strains match the virus actually in circulation varies from year to year.
So that means that even if you are in that 10 percent of sick people with flu-like symptoms who really have influenza A or B, only about half of those vaccinated will be helped by the vaccine because the other half will have strains that were not included in the vaccine.1  And even with the best matching conditions the vaccine may diminish your symptoms somewhat, but not necessarily preclude you from catching the flu.  The internationally renowned Cochrane Collaboration investigated this issue directly by reviewing all the relevant studies, involving over 70,000 participants.  The most impressive thing about this meta-analysis was that the authors were completely independent from the U.S. vaccine manufacturers and the powerful pharmaceutical and vaccine lobby, so the reported results were unbiased.
They assessed all trials that compared vaccinated people with unvaccinated people. The combined results of these trials showed that even under ideal conditions (vaccine completely matching circulating viral configuration), 4% of unvaccinated people and 1% of vaccinated people became infected – the vaccine had only a minor benefit. They authors estimated that under average conditions, 100 people need to be vaccinated to avoid one set of influenza symptoms or you would have to be vaccinated every year for 100 years, to save yourself one flu episode. Interestingly, the study showed that flu vaccine did NOT significantly affect the number of people hospitalized or working days lost, and did not prevent flu-associated complications or those rare flu-associated deaths.1, 2  So even though the vaccine had some very slight effects, the benefits were very small.  In fact, in  children two years and younger they found the effectiveness of the vaccine was no better than a placebo.3
The Cochrane review’s authors were highly critical of the U.S. Centers for Disease Control, with its members having financial ties to the pharmaceutical companies. They noted that industry-funded studies were more likely to report findings favorable to the vaccines, that there was evidence of “widespread manipulation of conclusions” in those studies. The authors disagreed with the CDC’s  recommendation for universal vaccination at all ages without clear evidence of significant effectiveness and safety.  Certainly the elderly, the group most vulnerable to non-pandemic flu, should benefit the most, but this also is not observed as the vaccine does not work well in the elderly because of their decline in immune function.3, 4
To summarize, the vaccine does have some slight effects in reducing flu incidence and severity, but in those at most at risk, the very young and the very old, it is not yet clear whether the vaccine has any protective effect at all.
Those of us that are healthy need not worry about the dangers of the flu anyway.  No treatment, drug or vaccine is without risk, and you only have to read the circular with the vaccine to be informed of those clear risks.  Also, if you do get a flu shot, never get a shot from a multi-use vial, which contains more mercury and preservatives than the single dose vials.
On the other hand, eating your G-BOMBS has no known side effects.
