Banana Bread No Oil, No White Sugar


Preheat oven to 375

In a bowl mash 2 large very ripe bananas

Add:
1 1/3 cups whole wheat pastry flour
1/2 cup real maple syrup
1 teaspoon baking powder (aluminum free)
1 teaspoon baking soda
1/2 teaspoon kosher salt
1/2 teaspoon cinnamon

Mix until well blended

Add 1/2 cup walnuts

Pour onto a bread pan (I lined mine with parchment paper) and bake for 45-50 minutes

  1. Tell me where to buy whole wheat pastry flour. I have regular whole wheat in my pantry. Can it be substituted?

    1. I've tried substituting it but it didn't work out as good, too dense. I buy mine in the natural section of my local grocery store (Wegmans). Most health food stores will carry it and it is also available on www.amazon.com
