Banana French Toast

Makes a great Sunday breakfast!

In a shallow pan (I used a glass pie plate):

mash 2 very ripe bananas with a fork.

Stir in:
2/3 cup non-dairy milk (I used almond) or enough to get a thin pan cake batter consistency
1/2 teaspoon cinnamon
fresh grated nutmeg
1-2 tablespoons maple syrup.

Soak your favorite whole grain of GF bread in the banana batter
(I used Wegman's organic whole grain sourdough).
Cook in a pre-heated pan using vegetable spay to prevent from sticking.

Serve with mixed berries or your favorite fruit.
