This is so light and delicious for a great summer salad.
In a small pot bring to boil 1 c quinoa and 2 c water. Boil until all the water has evaporated, be careful not to burn it. Let cool.
Peel, quarter lengthwise and slice thin 2 -3 cucumbers (organic). Add a variety of other veggies. I used chopped tomatoes, sweet & hot peppers and olives (naturally cured).
Add the cooled quinoa to the chopped veggies. Dress with NNC salad dressing- 4:1 balsamic vinegar and real maple syrup. Garnish with parsley and fresh ground pepper.
