Tomato Soup
You can either do this on the stove or in a crock pot.
In a large pan saute in a 1/4 cup +/- water until starting to soften:
1 chopped onion
1 shopped celery stalk
2-3 carrots
1 hot pepper (optional)
Add sauteed veggies to either a soup pot or a crock pot with:
2 cans of chopped tomatoes (organic)
2 cans of pinto beans with liquid
1 can of water
1 tablespoon maple syrup
fresh or dried basil
Simmer until heated through.
Optional:
If you want a tomato vegetable soup, you can add your favorite frozen veggies after the soup is done. Allow to heat through for a couple of minutes. This keep the veggies from getting mushy.
