This is one of my family's favorite autumn dishes! |
In a crock pot add:
1/2 cup water
1 chopped onion
1 chopped celery stalk
1 washed unpeeled and chopped sweet potato.
Cook on high for 11/2 hours. (Or you can do it quicker sauteing vegetable in water on the stove top).
Add:
2 cans of pinto beans with liquid
2 cans if chopped tomatoes
1 can of water
1 tablespoon of maple syrup (optional)
1 tablespoon of cumin
1/2 teaspoon of the following:
turmeric
cinnamon
coriander
garlic powder.
Adjust seasonings to your taste.
Cook on high four 1-2 hours of on low for 4-5 hours.
Optional: add you favorite frozen veggie 15 minutes before serving.
